Easy Oatmeal Carrot Cake
Ingredients:
For the Cake:
- 1 cup rolled oats
- 1 cup boiling water
- 1 cup grated carrots
- 1 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 and 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt

- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract

Cooking Steps:
For the Cake:
Step 1: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
Step 2: In a bowl, pour boiling water over rolled oats. Let it sit for 10 minutes to soften.
