Christmas Raspberry Cake Roll
Ingredients:
- 4 large eggs
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1 teaspoon baking powder
- A pinch of salt
- 1 cup raspberry jam
- 1 1/2 cups heavy whipping cream
- Powdered sugar for dusting

Instructions:
Step 1: Preheat your oven to 350°F (175°C) and grease a jelly roll pan. Line it with parchment paper, leaving an overhang for easy rolling.
Step 2: In a bowl, beat eggs, granulated sugar, and vanilla extract until light and fluffy.
Step 3: In a separate bowl, whisk together flour, baking powder, and salt.
Step 4: Gradually fold the dry ingredients into the egg mixture until just combined.
Step 5: Spread the batter evenly in the prepared pan and bake for 12-15 minutes or until the cake springs back when touched.
Step 6: While the cake is baking, lay a clean kitchen towel on the counter and dust it with powdered sugar.
Step 7: Once baked, immediately invert the hot cake onto the prepared towel and gently peel off the parchment paper.
Step 8: Starting from the short end, carefully roll the cake and towel together. Allow it to cool completely.
Step 9: Unroll the cake and spread raspberry jam evenly over the surface.
Step 10: In a separate bowl, whip the heavy whipping cream until stiff peaks form.
Step 11: Spread a layer of whipped cream over the raspberry jam.
Step 12: Carefully roll the cake back up, this time without the towel.
Step 13: Chill the cake roll in the refrigerator for at least 2 hours.
Step 14: Before serving, dust with powdered sugar for a snowy finish.
