Palak Ki Chatni
Ingredients
- 2 cups spinach leaves, washed and chopped
- 1/2 cup fresh coriander leaves
- 2 green chilies
- 1/2 cup grated coconut
- 1/4 cup roasted chana dal (split chickpeas)
- 1 tablespoon tamarind pulp
- 1 teaspoon cumin seeds
- Salt to taste
- 1 tablespoon oil
- 1/2 teaspoon mustard seeds
- A pinch of asafoetida (hing)
Steps
Step 1: In a pan, heat oil over medium heat. Add mustard seeds and let them splutter.
Step 2: Add cumin seeds and asafoetida. Sauté for a few seconds.
Step 3: Add chopped spinach and sauté until it wilts and reduces in volume.
Step 4: Add fresh coriander leaves, green chilies, grated coconut, roasted chana dal, and tamarind pulp to the pan. Mix well.
Step 5: Sauté the mixture for a few more minutes until the ingredients are well combined and the flavors meld.
Step 6: Allow the mixture to cool.
Step 7: Transfer the cooled mixture to a blender or food processor. Add salt to taste.
Step 8: Blend until you achieve a smooth chutney consistency. Adjust salt if needed.
Step 9: Serve Palak Ki Chutney as a side with dosa, idli, rice, or any other Indian dish of your choice.
